| Traquair House Ale | Borders, Scotland | 7 | A handmade ale brewed in the ancient brew house of the oldest inhabited house in Scotland. Brown with ruby hues and an off-white head. Sweet tastes of smoked malt, raisins and caramel. The production of Traquair House Ale consists of an infusion mash, after which the wort is drawn off and boiled with the hops. The wort is cooled and pitched with bottom fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing. 7.2% |

| Fraoch Heather Ale | Lanarkshire, Scotland | 7 | Brewed in Scotland since 2000 B.C. heather ale is probably the oldest style of ale still produced in the world. From an ancient Gaelic recipe for "leann fraoich" (heather ale) it has been revived and reintroduced to the Scottish culture. Into the boiling bree of malted barley, sweet gale and flowering heather are added, then after cooling slightly the hot ale is poured into a vat of fresh heather flowers where it infuses for an hour before being fermented. |
