distinctive, complex taste. Strong Belgian type ale similar to a Port
wine ! Is as dark as can be, mellow in taste with an aroma of ripe

Wonderful complex aroma, consisting
mainly of ripe
bananas and cloves. Also detectable are fresh sliced green apple, dried
fruit and spicy hops. Clove also floats around sporadically. Spicy hops
are next, along with dried fruit. Very 'carbonated' mouth feel. A
medium body, but very fruity, spicy, and complex! n contrast to all the
others, the Orval Trappist brewery makes only one beer for the general
public. It has an intensely aromatic and dry character. Between the
first and second fermentations there is also an additional dry-hopping
process. Through this the beer acquires its pronounced hoppy aroma and
extra dry taste. Bottled at 5.2% abv - can go up as high as 7.2%. |

The triple refers to three grains:
barley, oats,
and wheat. Pours a golden brew with a big attractive head that stays
put for some time and later changes into a foamy layer. Aroma is filled
with spices, floral notes and citrus fruits. Spicy, complex with
coriander, lots of fruits and some notes of alcohol. The beer is well
carbonated and goes down very smoothly. 8% |

A traditional Flemish sour ale.
Duchesse is
matured in oak casks; smooth with a rich texture and interplay of
passion fruit and chocolate and a long, dry and acidic finish. After
the first and second fermentations, the beer goes into oak barrels for
18 months of maturation. Refreshing, yet quite sour ale with low to
negligible bitterness. One of Ashleys most unique beers. |

Deliciously sour with hints of
tart, ripe
raspberries. The Lou Pepe Framboise is a blend of three different
2-year-old lambics. The simple idea behind the special Lou Pepe blend
is that it should have much more of the taste of old lambic, which is
of course much harder, drier, more sour, and more complex than the
young stuff. This being framboise, it has to be spritzy, so the brewery
opted for the same method used in conditioning champagne: everyday
refined sugar is dissolved in water and added to cause a
refermentation. The sugar ferments out completely, so there is no
residual sweetness. |
